Meatless Monday: Feta Mint Pea Salad with Rice

Feta Pea Salad


  • 1 1/4 c Vegetable Broth
  • 3/4 c Instant Brown Rice
  • 1 1/2 c Frozen Peas
  • 3/4 c Sliced Green Onion
  • 1/4 c Crumbled Feta Cheese
  • 1/4 c Fresh, Sliced Mint
  • Black Pepper to Taste


  1. Bring broth to a boil in a large saucepan over high heat. Add instant rice and bring to a simmer.  Cover and reduce heat to medium-low.  Cook for 4 minutes.
  2. Stir in frozen peas and return to a simmer over high heat. Cover and reduce heat to medium-low.  Continue to cook until the peas are hot and the rice has absorbed most of the liquid (approximately 6 minutes).
  3. Remove the saucepan from heat and stir in onion, feta, mint and pepper. Cover and let set until the liquid is absorbed (approximately 3-5 minutes).
  4. Makes 4 servings.
