Meatless Monday: Feta Mint Pea Salad with Rice

Ingredients:
- 1 1/4 c Vegetable Broth
- 3/4 c Instant Brown Rice
- 1 1/2 c Frozen Peas
- 3/4 c Sliced Green Onion
- 1/4 c Crumbled Feta Cheese
- 1/4 c Fresh, Sliced Mint
- Black Pepper to Taste
Preparation:
- Bring broth to a boil in a large saucepan over high heat. Add instant rice and bring to a simmer. Cover and reduce heat to medium-low. Cook for 4 minutes.
- Stir in frozen peas and return to a simmer over high heat. Cover and reduce heat to medium-low. Continue to cook until the peas are hot and the rice has absorbed most of the liquid (approximately 6 minutes).
- Remove the saucepan from heat and stir in onion, feta, mint and pepper. Cover and let set until the liquid is absorbed (approximately 3-5 minutes).
- Makes 4 servings.
