Meatless Monday: Brusssel Sprouts with Apple and Onion

  • 1 pound steamed Brussels sprouts
  • 1 cup sliced red onion
  • 1 apple, sliced thin
  • 1/4 cup apple juice
  • 1 tablespoon light soy sauce
  • 1 tablespoon rice vinegar


  1. Lightly spray a large, non-stick skillet with
  2. cooking spray and place over medium-high heat. Sauté onion and apple 3 minutes, add remaining ingredients, stir and heat through.
  3. Makes four servings.

  • Sodium: 280 mg
  • Total Carbohydrate: 17 g
