Meatless Monday: Tomato Okra Bake

Tomatoes and Okra


  • 1/2 cup frozen lima beans
  • 2 cups frozen cut okra, thawed
  • 4 medium tomatoes, chopped
  • 1 medium onion, chopped
  • 1/2 green pepper, seeded and chopped
  • 1/4 – 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt


  1. Preheat oven to 350 degrees F. Cook lima beans according to package directions. Drain. In a casserole dish, combine lima beans, okra, tomatoes, onion, sweet pepper, crushed red pepper, and salt.
  2. Bake, covered, for 45 minutes.  Remove cover and stir.  Bake additional 30 minutes, uncovered.
  3. Makes 6, 2/3 cup servings.

  • Carbohydrates: 12g
  • Fiber: 3g
  • Protein: 3g
  • Sodium: 112mg
