Meatless Monday: Italian Spinach Pie

Crustless Spinach Pie

Ingredients:

  • 16 oz container 2% cottage cheese
  • 10 oz package frozen chopped spinach, thawed, well drained
  • 1 cup part-skim mozzarella cheese, shredded
  • 4 eggs, lightly beaten
  • 1/2 cup red bell pepper, chopped
  • 1/3 cup parmesan cheese, grated
  • 1 tsp. dried oregano leaves

Directions:

  1. Preheat oven to 350ºF. Mix all ingredients until well blended.
  2. Pour into greased 9-inch pie plate.
  3. Bake 40 min. or until center is set.

Nutrition Information per Serving:

Recipe makes eight servings, one serving is equal to 1/8 of recipe.
