Meatless Monday: Leftover Potato Soup

With all those Thanksgiving leftovers hanging around the house, why not warm-up this Meatless Monday with this yummy leftover mashed potato soup recipe.  If you have them, leftover veggies would be a great addition to this quick and easy recipe!


  • 1 tablespoon chopped onion
  • 1 tablespoon butter
  • 2 cups non-fat milk
  • 1-1/2 cups leftover mashed potatoes (prepared with milk and butter)
  • 1/2 teaspoon salt, optional
  • 1/8 teaspoon pepper
  • 1 tablespoon minced chives


  1. In a saucepan, saute onion in butter until tender.
  2. Add the milk, potatoes, salt and pepper; heat through.
  3. Sprinkle with chives. Makes three 1-cup servings.

  • 401 mg sodium
  • 5 mg cholesterol
  • 28 g carbohydrate
  • 8 g protein
  • 6 g fat
