Meatless Monday: Mexican Corn Salad

10 oz Thawed Frozen Corn
1/2c Salsa
1 Sliced Green Onion
1/2c Sliced Radishes
4 Large Leaves of Lettuce


  • In a large bowl, combine the corn, salsa, green onion, and radishes.
  • Cover and chill for 2 hours.
  • Spoon the corn salad on the lettuce leaves to serve.
