Scrumptious Sweet Potato Slaw

¼ cup vegetable oil
¼ cup lime juice
1 ½ teaspoons sugar (optional)
1 ½ teaspoons fresh, grated ginger
5 ½ cups coarsely grated sweet potatoes
½ cup toasted walnut pieces
¼ cup green onion

In a large bowl, whisk together oil, lime juice, sugar, ginger and salt.  Stir in sweet potatoes, walnuts and scallions.  Refrigerate before serving.

189 calories
11g fat
22g carbohydrates
3g fiber
3g protein
