Meatless Monday: Brusssel Sprouts with Apple and Onion

Ingredients:
- 1 pound steamed Brussels sprouts
- 1 cup sliced red onion
- 1 apple, sliced thin
- 1/4 cup apple juice
- 1 tablespoon light soy sauce
- 1 tablespoon rice vinegar
Directions:
- Lightly spray a large, non-stick skillet with
- cooking spray and place over medium-high heat. Sauté onion and apple 3 minutes, add remaining ingredients, stir and heat through.
- Makes four servings.
